Yup, still on my salad kick. Sharing some favorites from this summer. This one has spiced pecans (recipe below) on it. I found the recipe on the cayenne pepper jar from Whole Foods. LOVE them. On salads they are amazing, but let's face it, they make it to one salad and the rest don't make it to the next day…
This one was my dinner tonight. So good.
Spiced Pecans4 cups pecan halves
1 egg white, beaten
1/2 cup brown sugar
1 tablespoon kosher salt
1 teaspoon cayenne
Preheat oven to 350 degrees. Toss the pecans in a medium bowl with the egg white, making sure the pecans are evenly coated. Mis the sugar, salt and cayenne together. Toss with the pecans. Spread the pecans on a greased cookie sheet (I use parchment paper) in a single layer and toast in oven for 20 minutes. Remove from cookie sheet immediately to prevent burning.
