I have been playing around with cookie recipes. I LOVE cookies but really wanted a healthier option. Almost immediately after my cookies are cooled I stick them in the freezer. They last for a super long time and taste great frozen or zapped in the microwave for a few seconds. Big Girl likes to take one out in the morning and let it sit until after lunch. She's a planner like that. Me, I just eat them frozen. YUM!
Here is the best recipe I have come up with. I sifted through several recipes and did a fair amount of experiments before hitting on this one. They are GF + vegan but don't let that scare you. They are SUPER good. Even Little Man and Hubby give them the thumbs up.
AMAZING GF + VEGAN COOKIES
makes 24 medium or 36 small cookies

1/3 c cashew butter (or other nut butter, almond, sunflower, walnut, etc)
1/3 c unsweetened rice milk (or other milk, almond, soy, etc)
2 tbsp apple sauce (or 1 egg if not vegan)
1 c coconut sugar
2 tsp vanilla
1 c oat flour (I used this one)
1 c oats (regular or quick)
3/4 c almond meal/flour
1/2 c ground flax seed/meal
1/4 tsp salt
1/2 tsp baking soda
1 c dried cherries (or craisins, raisins, dates, etc)
1 c cocoa nibs
Optional add ins: shredded coconut, almonds, walnuts, pecans, etc.
1. preheat oven to 400 degrees
2. in mixer, beat nut butter, milk, apple sauce, vanilla and sugar well
3. add flours, baking soda, salt, oats
4. add dried fruit and cocoa nibs
5. mixture will be thick + sticky! make golf ball sized balls for 24 medium cookies, adjust if smaller cookies are desired
6. bake about 8 min or until lightly brown on the edges
